Frothy matcha, right at home on the kitchen bench

Mossa™ is a complete set for making matcha, the green Japanese tea that is whisked into a froth rather than steeped. You get a ceramic bowl with a spout, a bamboo whisk, a whisk holder, a strainer and two bamboo spoons. Everything you need except the matcha powder itself.

What do the different pieces do?

  • The strainer removes lumps from the powder so the matcha is smooth.
  • The chashaku (the long, thin bamboo scoop) measures the correct amount of powder.
  • The bamboo whisk with 100 tines whisks matcha and water into a thick green froth. A regular spoon or whisk cannot do the same job.
  • The bowl with spout gives you room to whisk, and the spout makes it easy to pour the matcha into a cup or over milk and ice.
  • The whisk holder keeps the whisk in the correct shape while it dries, helping it last longer.

How to make one cup

  1. Sift two scoops of matcha with the chashaku into the bowl. That is about 2 g.
  2. Pour over around 70 ml of water at 70 to 80 °C. Boiling water makes the flavour bitter.
  3. Whisk quickly back and forth in an M-shape for 20 to 30 seconds, until frothy.
  4. Drink it straight from the bowl, or pour it through the spout over ice and milk.

About the bowl

The glaze flows freely during firing. This means the pattern varies slightly from bowl to bowl even when the colour is the same. The spout provides a clean pour, helping avoid spills when pouring into a cup or glass.

Questions and answers

Is matcha powder included?
No, the set contains the tools.

Why does the whisk need a holder?
The holder helps the tines keep their correct shape and allows the whisk to dry evenly. This helps it last longer.

Can I make matcha latte?
Yes. Whisk the matcha with a little water, then pour it over ice and cold milk or into warm milk.

Are all the bowls identical?
The colour is the same, but the glaze pattern is never completely identical.

Is the set suitable as a gift?
Yes. It is complete and ready to use, both for someone who loves matcha and someone trying it for the first time.
